As a kid whenever I visited my paternal grandparents’ place I could see lots of pineapple growing there. Grandma used to prepare varieties of dishes using pineapple. This dish is one among them. And this is my favourite. I love the flavour and taste of the recipe. We,Odia people love to have a sweet Savory chutney or khata in Odia in our thali to complete the meal. Sapuri in Odia is pineapple and khata means sweet and sour relish.
Pineapple is a tangy and sweet fruit. It is a good source of Vitamin C and Manganese. It also contains Thiamine and Vitamin B which is energy booster. Pineapple is fat free, cholesterol free and low in sodium. It's health benefits can be listed as ability to improve respiratory health, acute cough and cold, improve digestion, help you lose weight, strengthen bones etc. It is a store house of goodness.
Here is the recipe
Pineapple- 200gms
Panch Phutan- 1tbsp
Curry Leaves- 1string
Whole Red Chili- 2
Salt to taste
Sugar- 1/2 cup
(Depends upon the sweetness of the pineapple)
Haldi- 1tsp
Kashmir Red Chili Powder- 1tsp
Hing- 1/2tsp
Cut the skin of the pineapple and remove the cores of the pineapple properly. Cut the pineapple into small cubes.
Heat oil in a pan and add red chili to it. Then add hing to it and fry. Then add the panch phutan and let it crackle. Now add curry leaves and fry again.
Add chopped pineapple to it and fry for some minutes. Then add salt, haldi and red chili powder and cook up to soft. Mash the pineapple pieces at the back of the ladel and make it bit mushy.
Then add half cup of water to it and allow it to boil. Then add sugar to it and let the sugar melt in. Allow it to cook on simmer for 5 more minutes. Switch off the gas.
It is ready to serve.
